Spooky Rice Crispy Monsters
These whimsical little monsters are a blast to make with kids, and perfect for Halloween! Prepare the rice crispy bars and let the little ones decorate with eyeballs. This one is sure to amuse the crowd!
Time: 45 minutes · Servings: ~18 bars
This recipe requires coloring white chocolate. To color white chocolate, you will need to use an oil-based food color. If you don’t have some on hand, stir in some cooking oil with a gel food color (details in recipe)! This will avoid dry and brittle chocolate.

For Rice Crispy Bars:
1/4 cup butter
1 bag large marshmallows
1/2 tsp vanilla extract
6 cups Rice Krispies cereal
Cooking spray
For Chocolate Coating:
White chocolate chips
Candy eyes
Cooking oil
Gel food-coloring

Spray a 9”x13” baking pan with cooking spray.
On low heat, melt butter in a large pot.
Add marshmallows and stir until melted and combined.
Remove pot from heat and add vanilla extract and Rice Krispies. Combine well.
Pour the mixture onto the baking pan and spread evenly with a spatula. To avoid sticking, spray the spatula with cooking spray.
Allow to cool & firm. Then cut into bars.
Create a double boiler by stacking a heat-resistant bowl on top of a pot of boiling water.
Melt white chocolate chips by pouring into the heat-resistant bowl and stirring gently.
Color the chocolate by mixing in your oil-based food color. To create your own oil-based food color, mix roughly equal parts cooking oil and gel food color. Once mixed thoroughly, add to your chocolate to color.
Coat the tops of each rice crispy bar, alternating orientation. Decorate immediately with candy eyes!
